BLUEBERRY AND BANANA CREAM

A sweet creamy banana mixture is a very special topping for tart blueberries.

2 cups fresh blueberries

½ cup whipping cream

2 Tbsp sugar

1 large very ripe banana

1 tsp lemon juice

½ tsp vanilla extract

Wash blueberries and divide among 4 large sherbet glasses.  Whip cream and sugar with an electric mixer or rotary beater in a small bowl until mixture begins to thicken.

 Peel banana and cut up into cream.  Add lemon juice and vanilla.  Beat until banana is quite well broken up.  Mixture will be soft.  Pour over berries and serve immediately.
