  BLUEBERRY APPLE CRISP

5 cups apples
2 cup blueberries
1/3 cup sugar
1 Tbsp flour
1 cup all-purpose flour
1 cup packed brown sugar
1 cup quick cooking oats
1 tsp baking powder
1 tsp cinnamon
½ tsp nutmeg
1/4 tsp salt
½ cup butter or margarine

Combine fruit with granulated sugar mixed with 1 Tbsp flour, in 2 qt casserole.

Combine flour, brown sugar, oats, baking powder, cinnamon and salt. Blend in butter. Sprinkle over fruit.

Cook at 350 deg F. 45 - 60 minutes.

 

Cooking for a crowd:
Prepare a mix: 6 cups flour, 6 cups packed brown sugar, 6 cups quick cooking oats, 2 Tbsp baking powder, 2 Tbsp cinnamon, 1 Tbsp nutmeg and 1 ½ tsp salt.   Blend dry ingredients together and store in a canister.  To make a crisp, use 3 cups of mix and blend in ½ cup butter or margarine.

Variations: Vary the amount of sugar depending on the sweetness of the fruit.  If fruit is very runny, increase flour to 2 Tbsp, or use 2 Tbsp instant tapioca as a thickening agent.

Blueberry Peach - use 4 cups blueberries and 2 cups sliced peaches (fresh or canned, drained) 

Blueberry - Use 6 cups blueberries
