SAUCY BLUEBERRY CAKE

1 ½ cups sifted all purpose flour

2 tsp baking powder

1/4 tsp salt

½ cup butter or margarine

1 cup sugar

2 eggs

6 Tbsp milk

1 tsp vanilla

1 cup blueberries

 

Sauce:

1 cup blueberries

½ cup water

2 Tbsp cornstarch

1/4 cup sugar

 

To make cake: Preheat oven to 375 F.  Sift then measure flour; resift with baking powder and salt.  Cream butter and sugar until light.  Add eggs one at a time, beating well between each addition.  Add flour mixture, alternately with milk and vanilla.  Fold in blueberries.  Turn into greased 8-inch square pan.  Bake 40 to 45 minutes.

 To make sauce: Rinse berries; place in saucepan.  Add one-quarter cup water.  Simmer 10 minutes.  Mix cornstarch with one-quarter cup water.  Add to berries with sugar.  Stirring constantly, cook until thickened and smooth.

 Spread sauce over warm cake.  Serve while warm.  Yield: 6 to 8 servings.
