MINI BLUEBERRY CAKES

Topping:

½ cup blueberries

2 Tbsp brown sugar

2 Tbsp chopped nuts

½ tsp cinnamon

grated peel of 1 lemon

 

Batter:

3/4 cup flour

1/3 cup sugar

1 tsp baking powder

1/4 tsp salt

½ cup milk

1/4 cup butter

1 egg

1 tsp vanilla

1 cup blue berries

 

Grease 8 custard cups

For topping: Combine all ingredients, sprinkle evenly over bottom of cups.

 Batter: Mix dry ingredients,    Whisk milk and butter, egg and vanilla. Mix with dry ingredients.  Fold in 1 cup blueberries.  Spoon into custard cups and top with nut mixture.

Bake at 400 deg F. for 18-20 minutes.

Cool on rack 2 or 3 minutes turn out on dessert plate blueberry side up.

Store in airtight container in frig.
